    Wall of Honor Level:
    Air and Space Sponsor

    Honored by:

I served as the first NASA (Manned Spacecraft Center) Flight Food and Nutrition Coordinator. With my prior USAF (Wright-Patterson AFB Aero Medical Laboratories) experience in the support of test foods for Project Mercury, I moved to Houston to establish the Gemini/Apollo/Skylab food systems. The US Army Natick Laboratories provided the food technology support I needed at NASA. A major outcome of the NASA food systems development has been the technology transfer to worldwide food safety in the creation of HACCP: Hazard Analysis of the Gemini Program coupled with the Critical Control Points requirement of the Apollo Program and imposed upon the food industry suppliers.
I was NASA scientist for the first experiments with astronauts on bone loss and muscle loss in micro gravity in Project Gemini. The problem remains a significant challenge to long-term flight.
For USAAF, I monitored the first research on recovery of water from human urine and other studies of closed regenerative (ecological) systems to sustain life on bases on the moon and planets.
